I am refreshed and re-energized after yet another Girls’ Game Night / Mom’s Night Out. Every month I look forward to an evening of friends, food, and fun… without any kids! I’m pleased to report that the cucumber sandwiches that I brought to the party were a hit! Every last one was devoured. Several people asked me for the recipe, so here it is:
Ingredients:
1 (8 ounce) package softened cream cheese
1 (.7 ounce) package dry Italian-style salad dressing mix
2 T mayonnaise *optional
1 (1 pound) loaf cocktail rye bread (I substituted thinly sliced french bread)
1 large cucumber, thinly sliced (I prefer the seedless English varieties)
several sliced pimento-stuffed green olives *optional
Directions:
- In a medium bowl or food processor, mix softened cream cheese and dry Italian-style dressing mix. Add mayonnaise or blue cheese dressing if desired. Refrigerate for an hour or overnight to allow the flavors to meld.
- Spread the mixture evenly on the slices of bread. Top each with a slice or two of cucumber.
- Decorate with slices of pimento-stuffed green olives, if you want to get fancy.
Variations: May substitute blue cheese salad dressing for the mayonnaise.
