Delightful Cucumber Sandwiches Recipe

2007-01-22-015I am refreshed and re-energized after yet another Girls’ Game Night / Mom’s Night Out. Every month I look forward to an evening of friends, food, and fun… without any kids! I’m pleased to report that the cucumber sandwiches that I brought to the party were a hit! Every last one was devoured. Several people asked me for the recipe, so here it is:

Ingredients:
1 (8 ounce) package softened cream cheese
1 (.7 ounce) package dry Italian-style salad dressing mix
2 T mayonnaise *optional
1 (1 pound) loaf cocktail rye bread (I substituted thinly sliced french bread)
1 large cucumber, thinly sliced (I prefer the seedless English varieties)
several sliced pimento-stuffed green olives *optional

Directions:

  1. In a medium bowl or food processor, mix softened cream cheese and dry Italian-style dressing mix. Add mayonnaise or blue cheese dressing if desired. Refrigerate for an hour or overnight to allow the flavors to meld.
  2. Spread the mixture evenly on the slices of bread. Top each with a slice or two of cucumber.
  3. Decorate with slices of pimento-stuffed green olives, if you want to get fancy.

Variations: May substitute blue cheese salad dressing for the mayonnaise.
